150th Anniversary Auction of “Yonezawa Beef” Features the Kozashi Index as a New Evaluation Criterion Professor Kuchida Delivers Keynote Speech at the Pre‑Event Ceremony — Covered by Yamagata Shimbun and Other Media
On Thursday, October 2, the commemorative auction celebrating the 150th anniversary of “Yonezawa Beef” was held. The highest carcass price reached 10,811 yen per kilogram. In addition to the MUFA value, which indicates the melt‑in‑the‑mouth quality of fat, the auction also adopted the Kozashi Index, a measure of marbling fineness, as part of its evaluation criteria.
At the pre‑event ceremony, Professor Kuchida delivered a keynote speech titled “The Fineness of Marbling Changes the Flavor.”
